Tapenade is an excellent savory companion for Seedboosts. Try the traditional version or add a new twist by mixing in sun-dried tomatoes.
Olive Tapenade
- 4 dl pitted black Kalamata olives
- 3 tbsp capers
- 2 garlic cloves
- 2 tsp lemon juice
- Fresh basil
- Cracked black pepper
- (3–4 tbsp olive oil)
Crush the olives, capers, garlic cloves, and basil leaves into a coarse paste using a mortar and pestle or hand blender. Season with lemon juice and cracked black pepper. You can add a little olive oil to round out the flavor.
Tomato Tapenade
- 4 dl pitted black olives
- 2 garlic cloves
- 2 dl sun-dried tomatoes
- 1 tbsp lemon juice
- 2 tbsp oil from the sun-dried tomatoes
- Fresh basil
Crush the olives, sun-dried tomatoes, garlic cloves, and basil leaves into a coarse paste using a mortar and pestle or hand blender. Season with lemon juice. You can add a bit of the oil from the sun-dried tomatoes to round out the flavor.
